chickpea patty bento

Chickpea patties, cherry tomatoes, green tomato chutney, kiwi, red grapefruit pink lady apple.

My first go at this recipe for chickpea patties, they were okay, they looked tasty but there was a little too much onion and not enough other flavours, I need to work on it a little.

Process:
  1. Make patties and let cool.
  2. Pack patties with cherry tomatoes and chutney.
  3. Segment grapefruit and collect juice in a bowl.
  4. Soak the apple in the grapefruit juice.
  5. Pack the fruit salad.
Time: Making and cooking the patties took about an hour, packing the bento, 15 minutes.

  1. Are the chickpea patties vegan or vegetarian? I'd love to have the recipe if they're vegan! :) Looking tasty anyhow!

  2. They're vegan. I'll give you the recipe, but be warned it needs some work! Haha! (So, if you figure out how to improve them, be sure to share!!)

    (serves one)
    1 medium potato (mashed)
    1 300g can chickpeas drained and rinsed
    1 cloves garlic crushed
    1 green onion, sliced
    1/3 cup coarsely chopped coriander
    1 tbs polenta

    Mash the potato and chickpeas together, stir in the garlic, onion and coriander.
    Using hands form into patties and coat with polenta.
    Preheat oven to 180 degrees Celsius.
    Brown both sides of patties in a lightly oiled medium frying pan. Then bake for about 15 minutes in oven, or until heated through.
