teriyaki tofu

(Serves three to four)

Ingredients
  • 350g firm tofu
  • 1 medium onion
  • 1 red capsicum
  • 20ml soy sauce
  • 20ml mirin (I used mirin seasoning as I couldn't get the real thing)
  • 20ml maple syrup
  • 2tbls corn flour
  • Olive oil spray
  • Asparagus and shallot to serve
Method

Cut the tofu into two even pieces.Place between paper towel and two plates, put something heavy on top, to press out excess water.

 
While tofu is pressing, roughly chop onion and capsicum.

 
 Mix soy sauce, mirin and maple syrup together in a bowl.

 
 After the tofu has been pressing for about 20mins, remove from paper towel and cut into desired portions.

 
Place a tablespoon of corn flour into a zip-lock bag, add half the tofu, shake to coat then remove from bag and repeat with remaining flour and tofu.

 
 Heat a fry pay over a medium high heat, spray with olive oil. Brown tofu on both sides, then remove the tofu from the pan and set aside.

 
 Respray the pan and add the capsicum and onion, brown

 
 Return the tofu to the pan, reduce the heat then pour over the sauce. When the tofu is heated through, serve.
