I had planned on having something else (a lentil and leek bake), but after cooking and tasting it... it was not very nice. :S
I threw this together with what I had on hand, including a single serve tub of microwave brown rice.
Process:
- Microwave rice
- Chop 1 large tomato and 1 very small onion
- Segment an orange over a bowl to collect juices
- Roughly chop about 2 tablespoons of mint and mix together with everything else and place in bento box
- Mix collected orange juice with a few splashes red wine vinegar and a little finely chop mint and place in dressing bottle
- Cut a kiwi fruit into eighths, chop a slice of pineapple into cubes, mix together and place in bento box
- Mix 2 teaspoons of natural yoghurt with a small pinch if cinnamon and a little honey to make fruit salad dressing
