two salad bento

Brown rice, orange and mint salad with orange juice and mint dressing and kiwi and pineapple fruit salad with honey yoghurt dressing.

I had planned on having something else (a lentil and leek bake), but after cooking and tasting it... it was not very nice. :S

I threw this together with what I had on hand, including a single serve tub of microwave brown rice.

  1. Microwave rice
  2. Chop 1 large tomato and 1 very small onion
  3. Segment an orange over a bowl to collect juices
  4. Roughly chop about 2 tablespoons of mint and mix together with everything else and place in bento box
  5. Mix collected orange juice with a few splashes red wine vinegar and a little finely chop mint and place in dressing bottle
  6. Cut a kiwi fruit into eighths, chop a slice of pineapple into cubes, mix together and place in bento box
  7. Mix 2 teaspoons of natural yoghurt with a small pinch if cinnamon and a little honey to make fruit salad dressing
Total time - 15 minutes
